This is one of those things where I"d need to be there to tell you more.

The SAFEST seat is the passenger seat properly belted in
Now on SOME RV's you can, with a bit of work, put a small desk top there with little issue on mine there is a "Storage compartment" (The "Glove box) I could take the lid off it and attach a larger desktop type platform.
There is some danger in this (pad the exposed end) and a few other complications but... I have no better answer.

I've seen some with a desk that folds out of the dash..that could work.

The basic answer to your question is that the air suspension used in most diesel pusher motorhomes gives a much smoother ride than the leaf or coil spring suspension used in most gas motorhomes.

My wife was able to do a lot of work on the road while travelling. The motorhomes we had to date were gas class A's. They rode horrible. The F53 is an awful experience no matter how much money you throw at it. But she was able to work most of the time without issue. Both of ours had a fold out desk in front of the passenger's seat. No matter what you get, it wont be like sitting still. You are in a moving vehicle. DP's run smoother than gas, and class A's run smoother than Class C's - disregarding exceptions. But it can be done in any of them - barring the occasional bone jarring expansion joint and pothole. You will need internet of course - a hot spot- preferably with unlimited data.

Over the years, I have done a lot of work in the right front seat of our coach. Even with the 3watt ERP repeater for the phone (hot spot), we can't stray too far from the blue roads. Coverage is still an issue in mountains or the western states. Fortunately, if I was watching and about to finish something that needed sending, we could hold up somewhere until I hit send. Receiving can just get slow or you may have to wait for a connection to arrive.

Two immediate warning that result from experience:
Don't even try to run a normal mouse. A trackball can work, but even touchpads can be a problem on a rough road.
Back everything sent on an independent solid drive. This means SSD or thumb drive. Conventional HDD get undependable with vibration.

If you and your consort can make this work, it has lots of peripheral advantages. It becomes easy to do travel research underway and reviews and reservations can be a spur of the moment thing.

As long as she has time to get up and fetch you fresh beers and make you a sammich while your driving, sounds like a good arrangement!

On our 2012 Tiffin Open Road on a Ford chassis, mu wife could work on her tablet going down the road. Sometimes up front and sometimes at the galley table or on the couch. She uses her Verizon Cell as a hot spot.
